Trachana (or Trahana) is an ancient, dried grain-and-fermented-milk product, traditionally made from cracked wheat or semolina mixed with yoghurt or fermented milk, then dried into granular pellets. It is a staple in Greek, Cypriot, and other regional cuisines, primarily used to make thick, nourishing soups or as a side dish. There are different varieties, such as sweet or sour, and coarse or fine, depending on the local ingredients and preparation methods.
Kremasti is a lively coastal village, 10 km southwest of Rhodes Town, and is popular for windsurfing and kitesurfing off pebbly Petaloudes and Kremasti beaches. Hip cafes overlook the waterfront, while family pizzerias sit amid gyro diners and sports bars inland. The gilded interior of Our Lady Church has icons and contemporary frescoes, and the ruined 15th-century Castle Kremasti has views to the sea. Rhodes Diagoras International Airport is close by.
